Khoresht Karafs Recipe

Khoresht karafs is a Persian celery stew that is made with meat, celery and other vegetables. It is one of the popular dishes in Iran. Persian people eat this dish with white rice or saffron rice. So the khoresht karafs recipe is –

  1. Lamb stew meat ( 1.5 kg )
  2. Onion ( 1 )
  3. Celery ( 1 bunch )
  4. Persley leaves ( 1.5 cup )
  5. Dried mint leaves ( 1 tbsp )
  6. Sunflower oil ( 1.5 cup )
  7. Turmeric powder ( 1 tsp )
  8. Ground black pepper ( 1 tbsp )
  9. Dried lemons ( 2 )
  10. Hot water ( 17 cups )
  11. Salt ( 1 tbsp or as your taste )
  • Firstly, cut the onion, celery stalks, celery leaves, parsley leaves into small pieces.
  • Then, put the sunflower oil, celery pieces, celery leaves, parsley leaves in the pan and cook it for 8 minutes.
  • Then, put the sunflower oil, onion, lamb stew meat, turmeric powder, ground black pepper, salt in another pan and cook it for 5 minutes.
  • Then, add the hot water to the pan and cook it until the lamb meat is cooked perfectly.
  • Then, again add the dried mint leaves, dried lemons and cooked vegetables to the pan and cook it for 10 minutes.
  • Lastly, serve this delicious khoresht karafs with Persian white rice.

  2. Onion ( 1 )

  5. Dried mint leaves ( 1 tbsp )
  6. Sunflower oil ( 1.5 cup )
  7. Turmeric powder ( 1 tsp )
  8. Ground black pepper ( 1 tbsp )
  9. Dried lemons ( 2 )
  10. Aloo bukhara / Dried palm ( 8 )
  11. Water ( 10 cups )
  12. Salt ( 1 tbsp or as your taste )

  7. Turmeric powder ( 1 tsp )
