Afghani Pickles Recipe

Afghani pickles are watery pickles that are made with vegetables, salsa, vinegar, spices and salt. In the Afghani language, pickle is called tursi. Afghani people eat pickles with rice and bread. It helps to enhance the extra taste of the rice and bread. So the Afghani pickles recipe is –

  1. Big size cauliflower ( 1 )
  2. Big size round eggplants ( 2 )
  3. Big size carrots ( 3 )
  4. Coriander leaves ( 1 bunch )
  5. Tomatoes ( 2 )
  6. Bell pepper ( 1 )
  7. Garlic gloves ( 15 )
  8. Green chilies ( 8 )
  9. Vinegar ( 3 cups )
  10. Nigella seeds ( 1 tsp )
  11. Chili flakes ( 1 tbsp )
  12. Dry mint ( 1 tsp )
  13. Hot water ( 4 cups )
  14. Salt ( 3 tsp or as your taste )
  • Firstly, cut the cauliflower into large size.
  • Then, cut the eggplants and carrots into medium size.
  • Then, boil the cauliflower for 4 minutes.
  • Then, strain the cauliflower with a strainer.
  • Then, boil the carrot for 8 minutes.
  • Then, strain the carrot with a strainer.
  • Then, boil the eggplant for 5 minutes.
  • Then, strain the eggplant with a strainer.
  • Then, put the coriander leaves, tomatoes, bell pepper, garlic cloves, green chilies, salt and vinegar in the food processor bowl and blend it with a food processor.
  • Then, salsa will be made.
  • Then, put the boiled vegetables, garlic cloves, green chilies, chili flakes, nigella seeds, dry mint leaves, salt, vinegar, hot water and salsa in the air-tight glass jar.
  • Then, close the lid of the glass jar.
  • Then, shake the glass jar and keep it at room temperature for 2 days. After 2 days Afghani pickle will be ready for eating.
  • Lastly, serve this delicious Afghani pickle.

Afghani Achar Awri Recipe

Afghani achar/ pickle awri is little bit different taste than other Afghani pickle. So the recipe of this dish is-

  1. Big size cauliflower ( 1 )
  2. Big size round eggplants ( 2 )
  3. Big size carrots ( 3 )
  4. Turnip ( 2 )
  5. Crushed garlic ( 3 tbsp )
  6. Garlic cloves ( 8 )
  7. Green chilies ( 8 )
  8. Chopped green chili ( 1 tbsp )
  9. Vinegar ( 3 cups )
  10. Hot water ( 6 cups )
  11. Mustard seeds ( 3 tbsps )
  12. Salt ( 3 tsp or as your taste )
  • Firstly, grind the mustard seeds with a grinder.
  • Then, cut the cauliflower into large size.
  • Then, cut the eggplants, turnips and carrots into medium size.
  • Then, boil the cauliflower for 4 minutes.
  • Then, strain the cauliflower with a strainer.
  • Then, boil the carrot and turnip for 8 minutes.
  • Then, strain the carrot and turnip with a strainer.
  • Then, boil the eggplant for 5 minutes.
  • Then, strain the eggplant with a strainer.
  • Then, put the boiled vegetables, garlic cloves, crushed garlic, green chilies, chopped green chili, ground mustard seeds, salt, vinegar, hot water in the air-tight glass jar.
  • Then, close the lid of the glass jar.
  • Then, shake the glass jar and keep it at room temperature for 2 days. After 2 days Afghani pickle will be ready for eating.
  • Lastly, serve this healthy and delicious Afghani pickle with rice.

Afghani Pumpkin Pickle Recipe

Afghani pumpkin pickle recipe is a very easy recipe than other Afghani pickle recipes. So the recipe of this dish is-

  1. Pumpkin ( 500 gram )
  2. Garlic gloves ( 8 )
  3. Chilli flakes ( 2 tbsp )
  4. Dry mint ( 2 tbsp )
  5. Vinegar ( 2 cups )
  6. Hot water ( 4 cups )
  7. Salt ( 2tbsp or as your taste )
  • Firstly, grind the garlic cloves with the mortar and pestle.
  • Then, cut the pumpkin into medium size.
  • Then, boil the pumpkin for 15 minutes.
  • Then, strain the pumpkin with a strainer.
  • Then, put the boiled pumpkin, ground garlic, chili flakes, dry mint, salt, vinegar, hot water in the air-tight glass jar.
  • Then, close the lid of the glass jar.
  • Then, shake the glass jar and keep it at room temperature for 3 days. After 3 days Afghani pumpkin pickle will be ready for eating.
  • Lastly, serve this healthy and delicious Afghani pumpkin pickle with rice or bread.
