Zerdeli Sutlac Recipe

Zerdeli sutlac is a Turkish rice pudding. This pudding has two layers. One is milk rice pudding and another is saffron rice pudding. It is also called astarli sutlac. It is one of the popular dessert in Turkey. Ottoman Empire’s kings ate this dessert. So the zerdeli sutlac recipe is-

  1. Broken rice ( 1/2 cup + 1/3 cup )
  2. Water ( 2 cups + 6.5 cups ) ( for cooking rice )
  3. Cornstarch ( 1 tbsp + 1 tbsp )
  4. Sugar ( 1/3 cup + 1/4 cup or as your taste )
  5. Cow milk ( 5 cups )
  6. Vanilla powder ( 1 tsp )
  7. Saffron ( 1.5 tsp )
  8. Salt ( 1 pinch )
  9. Dried black currants 
  10. Pine nuts
  • Firstly, put the cornstarch, a little bit of normal temperature water in the bowl and mix it very well with a spoon.
  • Then, put the 1/2 cup of broken rice, 2 cups of water, milk and salt in the pan and cook it until the rice is cooked perfectly.
  • Then, add the sugar, corn starch water mixture to the pan and stir it very well.
  • Then, add the vanilla powder to the pan and cook it until the milk becomes thick.
  • Then, milk rice pudding will be made.
  • Then, put the milk rice pudding in the bowl and cool down it in the refrigerator.
  • Then, soak the saffron with a little bit of hot water for 20 minutes.
  • Then, again put the cornstarch, a little bit of normal temperature water in the bowl and mix it very well with a spoon.
  • Then, again put the 1/3 cup of broken rice, 6.5 cups water in another pan and cook it until the rice is cooked perfectly.
  • Then, add the sugar, corn starch water mixture to the pan and stir it very well.
  • Then, add the saffron water to the pan and cook it until the water is reduced.
  • Then, saffron rice pudding will be made.
  • Then, put the saffron rice pudding on the milk rice pudding and cool down the whole rice pudding or zerdeli sutlac in the refrigerator.
  • Lastly, serve this delicious zerdeli sutlac with pine nuts and dried black currants.

Zerdeli Sutlac Recipe Without Saffron

Some Turkish people make the zerdeli sutlac without using saffron. But the original zerdeli sutlac is made with saffron. So if we don’t have saffron in our house then we can make this dessert. So the recipe of this dessert is-

  1. Broken rice ( 1/2 cup + 1/3 cup )
  2. Water ( 2 cups + 6.5 cups ) ( for cooking rice )
  3. Cornstarch ( 1 tbsp + 1 tbsp )
  4. Sugar ( 1/3 cup + 1/4 cup or as your taste )
  5. Cow milk ( 5 cups )
  6. Vanilla powder ( 1 tsp )
  7. Turmeric powder ( 1/2 tsp )
  8. Rose water ( 2 tbsp )
  9. Salt ( 1 pinch )
  10. Dried black currants 
  11. Pistachio nuts
  • Firstly, put the cornstarch, a little bit of normal temperature water in the bowl and mix it very well with a spoon.
  • Then, put the 1/2 cup of broken rice, 2 cups of water, milk and salt in the pan and cook it until the rice is cooked perfectly.
  • Then, add the sugar, corn starch water mixture to the pan and stir it very well.
  • Then, add the vanilla powder to the pan and cook it until the milk becomes thick.
  • Then, the first layer of rice pudding will be made.
  • Then, put the rice pudding in the bowl and cool down it in the refrigerator.
  • Then, again put the cornstarch, a little bit of normal temperature water in the bowl and mix it very well with a spoon.
  • Then, again put the 1/3 cup of broken rice, 6.5 cups water, turmeric powder in another pan and cook it until the rice is cooked perfectly.
  • Then, add the sugar, corn starch water mixture to the pan and stir it very well.
  • Then, add the rose water to the pan and cook it until the water is reduced.
  • Then, the second layer of rice pudding will be made.
  • Then, put the second layer of rice pudding on the first layer of rice pudding and cool down the whole rice pudding or zerdeli sutlac in the refrigerator.
  • Lastly, serve this zerdeli sutlac with pistachio nuts and dried black currants.
