Margoogah Recipe

Margoogah is a popular dish in UAE, Saudi Arabia and Kuwait. It is also called margoog and al margoog. It is an Arabic stew that is made with meat, vegetables and spices. So the Emariti margoogah recipe is-

  1. Lamb stew meat ( 1.5 kg )
  2. Potatoes ( 2 )
  3. Bell peppers ( 2 )
  4. Eggplants ( 2 )
  5. Carrots ( 2 )
  6. Tomatoes ( 2 )
  7. Green chillies ( 3 )
  8. Garlic cloves ( 5 )
  9. Onion ( 2 )
  10. Sunflower oil ( 1 cup )
  11. Coriander seeds ( 1 tsp )
  12. Cumin seeds ( 1 tsp )
  13. Cardamoms ( 4 )
  14. Cinnamon sticks ( 4 )
  15. Cloves ( 4 )
  16. Dried lemons ( 3 )
  17. Tomato paste ( 3 tbsp )
  18. Turmeric powder ( 1 tsp )
  19. Ground black pepper ( 1 tbsp )
  20. Uncooked thin flatbread ( 1.5 )
  21. Hot water ( 16 cups )
  22. Salt ( 1.5 tbsp )
  • Firstly, cut the vegetables into small pieces.
  • Then, roast the whole spices, lemon in the frying pan and grind it very well with a grinder.
  • Then, put the lamb meat, sunflower oil, onion in the saucepan and cook it for 5 minutes.
  • Then, add the garlic cloves, ground spices, ground black pepper, turmeric powder, salt, hot water, dried lemons, tomato paste in the pan and cook it until the lamb meat is cooked perfectly.
  • Then, again add the vegetable pieces to the pan and cook it until the vegetables are cooked perfectly.
  • Then, cut the flatbread into small pieces.
  • Then, add the flatbread pieces to the pan and cook it for 3 minutes.
  • Lastly, serve this Emirati margoogah.

Saudi Arabian Margoogah Recipe

Saudi Arabian margoogah is little bit different taste from Emariti margoogah. So the recipe of this dish is-

  1. Chicken breast pieces ( 6 )
  2. Potatoes ( 2 )
  3. Eggplant ( 2 )
  4. Zucchini ( 2 )
  5. Carrots ( 2 )
  6. Tomatoes ( 2 )
  7. Bell peppers ( 2 )
  8. Onion ( 2 )
  9. Garlic cloves ( 4 )
  10. Chicken stock cubes ( 2 )
  11. Tomato paste ( 3 tbsp )
  12. Cinnamon sticks ( 4 )
  13. Bay leaves ( 3 )
  14. Dried lemons ( 2 )
  15. Cumin powder ( 1 tbsp )
  16. Curry powder ( 1 tsp )
  17. Ground black pepper ( 1 tbsp )
  18. Turmeric powder ( 1 tsp )
  19. Uncooked thin flatbread ( 2 )
  20. Water ( 12 cups )
  21. Salt ( 1.5 tbsp or as your taste )
  • Firstly, cut the vegetables and chicken breast pieces into small pieces.
  • Then, crush the garlic cloves.
  • Then, put the chicken breast pieces, sunflower oil, onion, crushed garlic cloves, dried lemon in the saucepan and cook it for 3 minutes.
  • Then, add the whole spices, cumin powder, curry powder, ground black pepper, turmeric powder, salt, water, vegetables, tomato paste, chicken stock cubes in the pan and cook it until the chicken and vegetables are cooked perfectly.
  • Then, again add the flatbreads to the pan and cook it for 3 minutes.
  • Lastly, serve this healthy Saudi Arabian margoogah.

Kuwaiti Margoogah Recipe

Kuwati margoogah is as tasty as Saudi Arabian and Emariti margoogah. So the recipe of this dish is-

  1. Beef stew meat ( 1.5 kg )
  2. Potatoes ( 2 )
  3. Eggplant ( 2 )
  4. Zucchini ( 2 )
  5. Carrots ( 2 )
  6. Tomatoes ( 2 )
  7. Onion ( 2 )
  8. Garlic cloves ( 5 )
  9. Pumpkin ( 250 gram )
  10. Green chillies ( 2 )
  11. Beef stock cubes ( 2 )
  12. Tomato paste ( 3 tbsp )
  13. Cinnamon sticks ( 4 )
  14. Coriander seeds powder ( 1 tsp )
  15. Bay leaves ( 3 )
  16. Dried lemons ( 2 )
  17. Cumin powder ( 1 tsp )
  18. Ground black pepper ( 1 tbsp )
  19. Arabic seven mix spice powder ( 1 tbsp )
  20. Uncooked thin flatbread ( 2 )
  21. Hot water ( 16 cups )
  22. Salt ( 1.5 tbsp )
  • Firstly, cut the vegetables into small pieces.
  • Then, crush the garlic cloves.
  • Then, put the beef stew meat, sunflower oil, onion, crushed garlic cloves, dried lemon in the saucepan and cook it for 5 minutes.
  • Then, add the whole spices, coriander seeds powder, cumin powder, ground black pepper, Arabic seven mix spice powder, salt, water, tomato paste, beef stock cubes in the pan and cook it until the beef is cooked perfectly.
  • Then, again add the vegetable pieces to the pan and cook it until the vegetables are cooked perfectly.
  • Then, cut the flatbread into small pieces.
  • Then, add the flatbread pieces to the pan and cook it for 3 minutes.
  • Lastly, serve this healthy and delicious Kuwaiti margoogah.
