Vegan Ghormeh Sabzi Recipe

Ghormeh sabzi is a Persian stew that is made with vegetables, meat, lentils and spices. It is one of the most traditional dish in Iran. It is eaten with rice. The authentic ghormeh sabzi is made with different types of meat like- lamb, beef and chicken. But we provided a vegan ghormeh sabzi recipe that is made without meat.

Ingredients

  1. Canned kidney beans ( 2.5 )
  2. Scallion ( 2 cups )
  3. Fenugreek leaves ( 2 tbsp )
  4. Coriander leaves ( 1 cup )
  5. Onion ( 1 )
  6. Turmeric powder ( 1 tsp )
  7. Black pepper ( 2 tsp )
  8. Dried lemons ( 2 )
  9. Sunflower oil ( 7 tbsp )
  10. Water ( 4 cups )
  11. Salt ( 1 tsp or as your taste )

Methods

  • Firstly, cut the onion, scallion, fenugreek leaves, and coriander leaves into small pieces.
  • Then, cut the dried lemons.
  • Then, fry the scallion, fenugreek leaves and coriander leaves with sunflower oil for 3 minutes.
  • Then, put the sunflower oil, onion, kidney beans, fried vegetables, turmeric powder, black pepper, dried lemons, water, salt in the pan and cook it for 10 minutes.
  • Lastly, serve this vegan ghormeh sabzi with rice.
